Rhubarb is plentiful these days, so time to gobble it up.  But don't eat their leaves or roots because they are poisoned with oxalix acid which can lead to death if consumed.  Ouch!

Rhubarb Sugar Cake


Serves 6

1/2 cup soft butter
1 cup brown sugar
1/2 cup honey
1 egg
2 teaspoons vanilla
1 teaspoon cinnamon
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
4 cups fresh rhubarb, cut into 1/2 inch slices
whipping cream (optional)

Preheat oven to 350 degrees F. Lightly grease an 8 x 8 inch cake pan. In a large bowl, cream together butter, brown sugar and honey. Add egg and beat until light in colour. Stir in vanilla. In a separate bowl combine cinnamon, flour, baking soda and salt. Alternate flour mixture and buttermilk into the butter mixture. Stir until all is combined. Fold in rhubarb. Spoon into prepared pan and bake 45 minutes or until tester comes out clean. Serve warm with whipping cream if using.
